Smothered Enchiladas

Smothered Enchiladas taste great, but they aren’t that healthy. So if you’re looking for healthy then this isn’t the place, but if you’re looking for great taste you have to  try these.

Ingredients:

2 lbs beef

1 pkg taco seasoning

1 can (4.5 oz) chiles, divided

2 cans cream of chicken

16 oz sour cream

8 flour torillas

chedder cheese (to taste)

green onions (to taste)

Cook beef and strain, return to pan and stir in taco seasoning and 1/2 of chopped chiles; set aside.

Stir together remaing green chiles, soup and sour cream. Pour 1/2 of soup mixture into a lightly greased baking dish.

Spoon beef mixture evenly down center of torillas; roll up. Place seam sides down in baking dish; top evenly with remaining soup mixture and cheese.

Bake at 350 degrees for 25 minutes.

Garnish with sour cream, Picante and green onions.
